Cucumber, Mint & Cream Cheese Sandwich


I adore Saveur and I keep trying new recipes from this magazine almost every weekend. My latest cooking experiment was very simple and refreshing: cucumber, mint & cream cheese sandwiches!

For 12 sandwiches:

150g cream cheese mix with 1/2 bunch of mint (cut into little pieces). Season with salt and pepper. Peel 1 English cucumber and cut it into thin slices. Spread mint cream cheese mix on 12 slices of white sandwich bread and remove crusts. Lay 6-8 slices of cucumber on each 6 bread pieces. Top each with a slice of bread; halve sandwiches horizontally.
