I am always looking through Saveur magazine trying to find new recipes (and awesome food pictures!), I found this panna cotta recipe and it seemed like a great summer treat, fruity and creamy at the same time.

It takes some time, though, because it has to sit in the fridge overnight for the gelatin to set, so I made it in the evening and boo and I shared it the next morning. We're both unemployed for the next few days and we're really enjoying the free time in the morning together.

The panna cotta turned out super-yummy, the lime peel mixed in with the mango puree makes it more fresh, and I was happy to find another use for my vanilla beans :-)

The recipe needs:

2 vanilla beans
800 ml cream
110 gr sugar
10 gr gelatin
1 lime zest
1 ripe mango
100 ml water

1. Mix gelatin and water together and set it aside to bloom.
2. Combine cream, vanilla beans (cut each in half), 80 gr of sugar and bring just to a boil, whisking frequently, over medium-high heat for 15 minutes. Remove from heat and take out vanilla beans.
3. Add gelatin mixture and whisk for 1 minute.
4. Pour into 6 cups and let it cool down at room temperature. Then refrigeratefor 4 hours.
5. Mix in blender and puree lime zest, mango, water and the rest of the sugar.
6. Serve panna cotta with mango puree on top.

DIY: Homemade Vanilla Extract

You need: 

3 vanilla beans (I brought mine from Mauritius!)
1 cup vodka
and a bottle!

 vodka for DIY homemade vanilla extract
 vodka and bottle for DIY homemade vanilla extract

All you do is pour unflavored vodka into a glass bottle, split the vanilla beans in half and stick them into the bottle. A good ratio is 1 vanilla bean per 1/3 cup of vodka. You need to let this steep in a dark place at room temperature for a couple of months until it is ready to use.

Really easy! Christmas is in 6 months, so you can start making some nice gifts now and keep them in a dark (secret :)) place. Have fun!

We thought this little birdie was hurt.  He was hopping around and not flying when we got close to him, so we carefully caught him in a towel, he looked pretty grumpy about being caught.  We decided to give him some bread, so we crumbled some up and offered it to him, but he took the opportunity of the blanket being open to leap out and fly away.  That's when we realized that he was just a young bird who hadn't completely learned to fly yet.  It was nice to meet him for a few minutes though, and we like to think we inspired him to fly ;-)

Featured: sweet peas, cherry tomatoes, wild strawberries, and a tiny cedar tree.

Cafe Loft breakfast

After a hard week nothing could be better than a Saturday breakfast on a rooftop in the center of Moscow. This breakfast at Loft Cafe was a birthday gift from my co-workers. Finally, three months later we found time to spend a morning together  :-) 
At first it was kind of breezy and grey but later we had our portion of sun. We enjoyed Italian coffee, hot chocolate, farmers eggs with bacon and Russian syrniki with condenced milk. Nice place, tasty food, good time with my husband.

Mauritius: Wildlife

Mauritius didn't surprise us with its wildlife as much as we probably expected. It's a green and nice island overall but you won't find monkeys on the trees or lots of tropical fruit all over. Here's what we saw there:

a huge spider (but only one!)  Somebody told us there weren't any big spiders in Mauritius.  Maybe they are rare.  It was kind of neat to see, but we were glad this was the only big spider we saw.  We should have put something in for scale -- it's about as big as a person's palm.
